Honeycomb
650 g castor sugar
100 g honey
250 g glucose
120 ml water
30 g bicarbonate soda
Bring sugar, honey, glucose and water to the boil and caramelise.
Whisk in bicarbonate soda and quickly pour onto silicon paper to cool.
